There is a simplicity and freshness to the Italian kitchen that has made Italian food popular all over the world. Last night we had dinner at Solferino, a quaint, small restaurant in one of the side alleys in Milan.
The restaurant has been open since 1909, and has been within the family for generations. The setting is traditional, the ingredients are fresh, and the menu though simple would appeal to any palate. The ambiance is a throw back to a bygone era. And the wine — just perfect.
Somehow the fruits and vegetable taste so much better in Europe than in the good old USA. May be because they don’t reinforce them with steroids, so that chickens don’t look the size of large turkeys. Maybe because they just don’t try as hard to be different.
The formula Is simple. Stay the course. Focus on what works. And another 100 years seem realistic. Simple is good. Simple is perfect. Salute’.
